Our Story
In this ever-evolving epicurean adventure, we dance to the rhythm of the seasons, draw inspiration from life’s experiences and travels, and, above all, craft dishes that resonate with emotions.
Touta is a childhood nickname for our renowned Cheffe, and Ballouta, the Lebanese word for Bellotta, is the acorn. The name and the logo represent an intimate cuisine where she shares her memories and childhood through dishes that resonate with the richness of Portugal.
Meet The Team
With a culinary experience shaped by a lifelong dedication to the art of flavors and traditions, Cynthia is the culinary visionary and driving force behind our concept. As the owner and Executive Chef of Nazira Catering, a family business in Lebanon, Cynthia brings a wealth of expertise and a passion for culinary excellence to our venture.
A distinguished “Academie Nationale de Cuisine” member and co-founder of “Les Disciples Escoffier Liban,” remarkable achievements feature her journey. Cynthia holds a Management and Culinary Arts diploma from the esteemed Paul Bocuse Institute in Lyon and has over 22 years of extensive work experience. Her culinary journey has been enriched through internships with illustrious institutions, including the prestigious French catering company Fauchon, working alongside Emile Cauvière, a MOF (Meilleur Ouvrier de France) and a bakery World Champion.
Throughout her career, Cynthia has consistently promoted Lebanese heritage in her homeland and across the globe. With its undeniable warmth and generosity, Portugal has been a choice made from the heart, providing a canvas for her to celebrate the rich culture of Portuguese and Lebanese in the most delectable and heartfelt manner.
Meet Rita, a dynamic force with a unique journey. After graduating in Fine Arts and Communication, she started her career in the world of TV and media in 2003. Her professional path led her to countries like Dubai, Egypt, and Qatar, where she played pivotal roles as a content creator and executive producer on renowned international shows such as The Voice, Masterchef, Arab’s got talent and many more.
But life had another exciting twist for Rita. As she worked closely with world-renowned chefs on various culinary shows, a new passion for gastronomy was ignited.
In 2013, Rita embarked on a new chapter by joining Nazira Catering’s team in Lebanon, as an operation manager.
With her passion for the visual and culinary worlds, she merged her skills to provide high-end services and memorable experiences for every client.
Years of relentless dedication and a hunger for learning have culminated in her current role as the managing partner and marketing director at Touta.

Meet Wael El Haddad, the managing partner of our company. He brings forth a rich legacy in the world of hospitality and F&B, inherited from his family’s deep-rooted involvement in the industry.
Wael’s academic journey led him to the American University of Beirut, where he earned a BSc in Food Science and Technology. Furthering his pursuit of knowledge, he achieved an MSc in Food Economics and Marketing from Reading University in England, UK.
Since 2002, Wael has passionately spearheaded NOW SARL as its managing partner, a company overseeing the successful operation of two Lebanese gems: “Rare,” an exquisite steakhouse and “NOW,” a vibrant live music bar restaurant in the heart of Beirut.
The Haddad family also takes pride in owning “Chez Nassim,” an Oriental sweets factory and store as well as, ‘’La Brezza’’ an italian cuisine restaurant in Broumana, Mount Lebanon and were the owners of The infamous Place de L’etoile cafe/restaurant in downtown Beirut.
Wael’s extensive experience and dedication for hospitality make him an invaluable asset to our project.
